INGREDIENTS
Mostly Coconut Oats
Makes one modest sized bowl. Increase to suit your needs.
1.5 tbs steel cut oats
5 tbs shredded, unsweetened coconut
1/3 c filtered water
1/3 c coconut milk, full fat (guar gum free)
pinch of Himalayan or sea salt
1 scoop multi collagen (optional)
METHOD
Bring oats and water to a very low simmer for 5 minutes. Add the shredded coconut, coconut milk, salt and collagen (if adding). Simmer for an additional 10 minutes on low.
Toppings: I love this with a small handful of blueberries, a spoon of nut butter, and some cacao nibs.
Note: If you’re not adding any additional toppings, you’ll likely want to increase the qty of the coconut to be properly sustained.
