Bison Bolognese

INGREDIENTS


Bison Bolognese

Serves 3-4

15 oz crushed tomatoes

1/2 onion, chopped (i like red onions)

1 tbs fresh rosemary (and/or basil) minced

4 cloves garlic

1/2 tsp salt + pepper

3 tbs extra virgin olive oil

8 oz bison, ground

1 tbs apple cider vinegar (optional)


METHOD


Heat the olive oil over medium low and add your onions + herbs. You can experiment with different herbs like sage, thyme, etc. too.

Sauté for 5 minutes.

⁣Add the bison, garlic, salt, pepper and apple cider vinegar. once the bison is mostly cooked through, add the crushed tomatoes and simmer for 15 minutes until thickened. Viola, that simple!

⁣Serve over a gluten free pasta - My favorite is this lentil pasta which is packed with protein. Runner up is a brown rice pasta from thrive market, low in protein but a good gluten free option.

Pair this with a salad or if you’re lazy like I am, have a few handfuls of greens before the meal and call it a day.
