Nori Avo Stir Fry
INGREDIENTS
Nori Avo Stir Fry
Serves 4
1.5 c cooked rice (forbidden black rice is my personal favorite)
1 tbs avocado oil
1 tsp sesame oil
1 bunch scallion
1 serano pepper, minced
1 c red cabbage, chopped
2 cloves garlic, minced
1 c green beans, chopped (ends trimmed)
2 baby boy choy, chopped
1 tbs ginger juice (from fresh grated ginger)
1/4 c coconut aminos (and/or Tamari sauce, see note below)
1 avocado, cubed
4 sheets roasted nori
salt and pepper to taste
METHOD
Heat avocado and sesame oil in a large pan over medium heat. Chop the scallions, separating the white and green parts. Add the white parts along with the serano pepper to the pan and sauté for 3 minutes. Add the cabbage, garlic, salt and pepper, and continue to sauté for 5-7 minutes. Once the cabbage beings to soften, add the green beans, baby bok choy, ginger juice and coconut aminos. You can also add Tamari at this time if you prefer (see note). Continue to sauté until the green beans are tender but still crisp.
Once the vegetables are cooked, turn off the heat and stir in the rice, avocado and nori sheets (torn into bite sized pieces). If you need additional sauce, add more coconut aminos or tamari sauce. Serve into individual bowls and top with green scallions.
If you want to add a protein, a fried egg or salmon goes really well.
