Smoked Salmon Bowl
Ouff, this is a mouth party. There is a lot of flavor going on here, from the kalamata olives to the salmon, to the dijon and kraut. It’s a very satisfying nourish bowl for both the soul and body. We’ve got fermented foods and fiber for the gut, the perfect balance of macronutrients for blood sugar, omega-3 fatty acids for mental health and lowering inflammation, and a bit of carbohydrates to soothe the nervous system.
INGREDIENTS
Smoked Salmon Bowl (For one, adjust as needed)
1.5 cups arugula
1/2 cup brown rice, cooked
5 kalamata olives
1/3 cup radishes, and or cucumbers sliced
2 tbs sauerkraut
4 oz smoked salmon (adjust for hunger level)
1 tbs dijon mustard
Lemon Vinaigrette (here’s my recipe)
METHOD
Warm the rice if cold and then add to your salad bowl. Top with arugula, sliced radishes and/or cucumber, olives, kraut, smoked salmon and a squeeze of dijon mustard. Finish with the lemon vinaigrette, a healthy drizzle, and some freshly cracked pepper.
Note that serving sizes are subjective. One might need more, or less, depending on their body type, activity levels, hunger levels, etc.
