INGREDIENTS


Cacao Bread

3 very ripe bananas

1/4 c aquafaba* or 1 egg

1/3 c coconut or walnut oil

1/3 c nut milk

2 tsp vanilla

1 1/2 c buckwheat

1/2 c sprouted oats

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

1/4 c cacao powder

1/4 c cacao nibs, optional


METHOD


preheat the oven to 350. mash the banana and add the liquid ingredients. combine your dry ingredients and then mix them into the wet. bake in an oiled bread pan at 350 for 45 minutes - test at 35 or 40 with a toothpick. it's so hard, but let cool before slicing - 10 min in the pan, and 30 on a cookie rack.

Notes

Aquafaba is the liquid from a can of garbanzo beans and how I traditionally made this recipe, but eggs are lovely too.

If you don’t use very ripe bananas then the bread will be dry. I wait until my bananas are more brown than yellow.


NUTRITION NOTES


Cacao is known to be one of, if not thee, most nutrient dense superfood. It’s very rich in antioxidants, with about 40 times the antioxidants of blueberries. It’s known to enhance mood and supports heart, cognitive, muscle and nerve function. Cacao is also prebiotic so it feeds healthy bacteria in the gut.

Look for raw, organic cacao powder. Note that this is different than cocoa powder which is highly processed and sweetened.
