Gut Friendly Ginger Root Vegetable Soup
Whenever my digestion feels like it could use a little support and a break from working so hard, a warm and healing soup is everything I need. Cooked vegetables are far easier for the body to digest, and the ginger helps by increasing our “digestive fire”. The ginger has a magic way of supporting many of the elements needed for digestion, like saliva, bile and gastric enzymes. But even when all is feeling well, a good soup is just so cozy and nice.
INGREDIENTS
Gut Friendly Ginger Root Vegetable Soup
1 sweet onion, chopped
4 carrots, sliced
4 stocks celery, sliced
1 hannah sweet potato, cubed
ginger (thumb size chunk, sliced)
3 cloves garlic, minced
2 bay leaves
1 jalapeño or lemon drop pepper
salt to taste or red miso paste
olive oil to drizzle
fresh herbs (like parsley, cilantro and/or dill) to serve
METHOD
Prepare the veggies and add everything to a soup pot. Add filtered water until there’s 3 inches covering the veggies, then simmer on low for 45 minutes or until veggies are tender.
Remove the bay leaf and maybe the ginger - I eat it the ginger for healing benefits. Then serve with fresh herbs, like parsley, cilantro and/or dill.
Side note: There is no need to peel carrots, ginger or potatoes. There's vitamins, fiber and goodness in there. Plus it's just a waste of time (:
