INGREDIENTS
Mango Coconut Chia Pudding (V)
Serves 1 but this is subjective, double if needed
The Pudding
1/2 c coconut milk (full fat!)
1/3 c filtered water
1/2 tsp vanilla
pinch of salt
3 tbs white chia seeds
Toppings:
Mango, diced
Coconut chips
Cacao nibs
Rose bud petals (optional)
METHOD
Combine all the ingredients for the chia pudding in a small pot over medium low heat, whisking to combine and prevent clumping.
Allow the coconut milk to come to the lowest of low simmers for about 7-10 minutes, stirring occasionally.
Once it reaches your desired consistency, remove from the stove. If you looked away for a minute too long and the pudding is thicker than you’d like, just add a little more milk. I like mine neither too thick or thin, a goldilocks consistency.
Top with mango, coconut chips, cacao nibs and if you have them, rose bud petals. If you want to simplify it, just adding mango is still really lovely.
Tip: This doesn’t have as much protein as I would like in a breakfast, so I always pair it with a matcha or chai latte that has protein to make sure I am properly fueled for the day.
NUTRITION NOTES
Chia seeds are incredibly nutrient dense and especially supportive of gut health and blood sugar balance. They’re a complete protein and rich in so vitamins and minerals, such as magnesium, zinc, boron, potassium, copper, manganese, niacin, iron, iodine, sulphur, and thiamine. A lot to love!
Coconut contains medium chain fatty (MCT) acids and monoglycerides which are anti- inflammatory and antimicrobial. Unlike animal fats, MCT oil can enter the mitochondria where they can be quickly used for energy. Coconut stimulates metabolism and boosts energy. Coconut is also very supportive of thyroid health.
Raw Cacao is beneficial on so many levels, but especially with stress. It not only contains serotonin, the calm and happy neurotransmitter, but it boosts the body’s natural production of serotonin. This helps improve our mood and fights stress and anxiety. Cacao also contains magnesium, a mineral that helps us feel calm yet is rapidly depleted by stress so being intentional about adding magnesium can be so helpful.
