Detox Nourish Bowl
As the season grows cooler I feel myself being drawn towards warming foods that feel grounding and nourishing in my body. It’s interesting how our bodies know what they need, and sends us little messages as cravings. And the earth also knows these things, growing exactly what is needed for the season. Life is brilliant.
What I’m loving at the moment are detox nourish bowls, which consist of some sort of sautéed detoxifying vegetables with legumes, avocado and lemon.
INGREDIENTS
Detox Nourish Bowl (makes two bowls)
1-1/2 cup brussels sprouts
2 cup dandelion greens, chopped
1 sweet onion, chopped
3 tbs olive oil
Salt and pepper
Avocado to serve (1/2 per person)
Chickpeas to serve (1/4 to 1/2 c per person)
Cayenne (optional)
METHOD
For the Brussels: Heat a large pan (cast iron ideal) over medium heat with 1 tablespoon of olive oil or avocado oil. Wash and halve the brussels then place them cut side down on the pan. Drizzle the tops with another table spoon of oil and sprinkle with salt. Cook for 8 minutes until the cut side has browned, then flip and cook for another 8 minutes. The outsides should be crispy, and the inside soft and creamy.
For the Dandelion Greens: Heat a large pan over medium low heat with 1 tablespoon olive or avocado oil. Add the onions, dandelion greens, and a little salt and pepper. Saute for about 10 minutes until tender.
Building the Bowl: Spoon as much brussels and dandelion greens as you’d like into a bowl, and serve with half an avocado, half a cup of chickpeas and a drizzle of lemon juice. If you like heat, a dash of cayenne is quite nice.
