Lemon Ginger Celery Juice (Using a Blender)
INGREDIENTS
Lemon Ginger Celery Juice
Makes approx. 4. cups
1 c filtered water
2 heads of celery, chopped
1 hand of ginger, about 1/4 c chopped
2 whole lemons, seeded
METHOD
Chop your celery and ginger. Slice the lemons in half and deseed them, but keep the skins on.
Add the water to the blender, along with 1 of the celery heads that have been chopped, or however much will fit in the blender. Blend for about 1 minute on high. Once blended there should be more room for the additional celery and ginger. Add these ingredients and blend again. Lastly add the lemons, blending once more.
If you have a small blender and can’t fit everything, put some of the juice in a jar while you blend the rest of the ingredients. No biggie.
Once everything has been blended, strain the juice through a nut milk bag or cheese cloth. Store in the fridge in a sealed jar for up to 3 days. The nutritional value is highest when it’s fresh though so drink up!
NUTRITIONAL NOTES
This juice contains three amazing ingredients for digestion, here’s the break down:
Celery juice stimulates the production of hydrochloric acid (stomach acid) which is needed to break down our food and protect us from bacteria we consume. It also helps with bloating, water retention, and acid reflux. Apart from digestion, celery juice is known to help lower blood pressure and inflammation, and fight against oxidative stress.
Ginger helps move food though the digestive system which prevents problems like fermentation in the gut, which typically causes gas. Ginger is especially helpful for people with SIBO (small intestinal bacterial overgrowth) and IBS. It also increases the production of saliva and is known to increase digestive enzymes which help break down food. Ginger is also a powerful anti-inflammatory which means it helps prevent against inflammation in the gut and issues like gut permeability aka “leaky gut” which causes a whole host of health issues.
Lemon Peels contain D-limonene which is know to stimulate quicker gastric emptying (move food from the stomach to the intestines) helping prevent fermentation, bloating and acid reflux. D-Limonene may also help heal the mucosal lining of the stomach, and help heal ulcerated tissue. Added bonus, this compound is not only beneficial for digestion, but it’s been show to help with anxiety and stress!
To sum it up, this is a super nutrient dense juice that’s especially healing for digestion and inflammation, but the benefits extend far beyond just digestion!
