Blueberry Basil Quinoa Salad
INGREDIENTS
Blueberry Basil Quinoa Salad
Serves 4
2.5 c cooked quinoa
1 c sugar snap peas, sliced diagonally end to end
1 c blueberries
1/2 c fresh basil, chopped
1 lemon, juiced (2 if the lemons are dry)
4 tbs olive oil
1.5 tsp dijon
1 tbs maple syrup
Salt and pepper, to taste
METHOD
Toss the olive oil, lemon juice, dijon, maple syrup, salt and pepper together. Add the remaining ingredients. Adjust to taste by adding more lemon if needed, or a touch more maple. Bim bam boom.
This salad keeps well.
