Sesame Ginger Kale Salad with Nori
INGREDIENTS
Sesame Ginger Kale Salad with Nori
Serves 2, as main
4 c kale, torn into bite size pieces (i mixed both dinosaur and curly)
1/2 c red cabbage, thinly sliced
4 sheets of nori seaweed, torn
1 c brown or black rice
2 shredded carrots
1-2 tbs sesame seeds
For the dressing
3 tbs sesame oil
4 tsp ginger juice (from freshly grated ginger)
2 tbs rice vinegar
1 tbs tamari
1 tbs honey
METHOD
In a large bowl massage the kale with the dressing until tender (but don’t pulverize it). It should take about 2 minutes. Add remaining ingredients and serve.
This salad makes wonderful leftovers or packed lunches. Kale and cabbage have a nice way of not becoming soggy.
