Strawberry Cream Popsicles (V)

Easing into summer with these delightful tasty, strawberry cream popsicles. These pops are made with creamy coconut milk for healthy, body loving fats; antioxidant and vitamin C rich strawberries; and are sweetened with just a touch of maple syrup. They’re one of thee most simple, pure deserts and take just 15 minutes to make! Less the freezing time of course.

So far, I’ve only explored the strawberry cream pops, but I have a feeling the strawberries can be swapped for all sorts of fruits. Mango is the next one on my list to try, and then I’m thinking a mojito style pop with lime zest is in my future.

Making popsicles have turned out to be such a joy.

 

INGREDIENTS


Strawberry Cream Popsicles (Vegan)

Makes 10 popsicles

2.5 cups canned coconut milk, full fat

1.25 cups fresh strawberries, halved

3 tbs pure maple syrup

1 tsp vanilla extract

1/8 tsp himalayan salt

Optional Topping

4 tbs granola of choice


METHOD


For this recipe you’ll need popsicle molds. I find silicon molds the easiest to use - these are the ones I have.

Combine the coconut milk, strawberries maple syrup, vanilla and salt in a blender, and blend until combined. The mixture doesn’t need to be fully smooth, tiny strawberry bits can be nice.

Chill the mixture in the fridge for at least 2.5 hours (or overnight), then give it a stir before pouring into the popsicle molds. This chilling step isn’t essential if you’re in a pinch, but it keeps the coconut water and coconut fat from separating. You can see the separation in the photo, which was my first ever pop before I discovered that chilling the mixture perfected the consistency. It does look pretty though.

When pouring into the popsicle molds, leave approximately 1/3” space at the top to allow for the popsicle to expand when frozen, and to give yourself space to add a little granola.

If adding the granola, do so now, roughly 1/2 a table spoon per pop. Push the granola slightly into the popsicle mixture so it has something to freeze to. This step is purely for fun and can totally be skipped.

Place the popsicle lid on top (if it comes with one) and insert the popsicle sticks a little more than half way. Freeze for at least 4 hours.

To remove the popsicles, allow the mold to sit on the counter for 7-10 minutes, then give them a tug to pull them out. Extras can be stored in an air tight container with parchment between them, or in resealable bags.
